Grate the zucchinis and sprinkle with salt. Let sit for about 10 minutes to draw out excess moisture. Then wrap the zucchini in a clean kitchen towel or cheesecloth and squeeze until nicely dry.

In a large bowl, combine the drained zucchini, beaten egg, Parmesan cheese, breadcrumbs, minced garlic, parsley, and black pepper. Mix until everything is well incorporated.

Preheat your oven to 400 °F (200 °C). Line a baking sheet with parchment paper. Scoop out about 1 tablespoon of the mixture and form into small balls. Place them evenly spaced on the baking sheet.
