Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.

In a large bowl, combine ground beef, panko breadcrumbs, minced garlic, chopped onion, soy sauce, gochujang, brown sugar, sesame oil, black pepper, and eggs.

Add the chopped green onions and, if desired, cilantro to the mixture. Mix until well combined but do not overmix.

Transfer the meat mixture to the prepared loaf pan. Smooth the top to form an even meatloaf shape.

Spread ketchup evenly over the top of the meatloaf for extra moisture and flavor.

Place in the preheated oven and bake for about 40 minutes, or until the internal temperature reaches 160°F (70°C).

Once done, remove from the oven and let the meatloaf rest for about 10 minutes to allow the juices to redistribute.
