Preheat your oven to 375°F (190°C).

Slice peaches in half and remove pits. Leave the skins on.

Place peach halves cut-side up in a baking dish.

Drizzle each peach with honey and dot with a little butter or coconut oil.

Sprinkle cinnamon and a drop of vanilla extract on each if using.

Bake uncovered for 20–25 minutes, until soft and golden.

Optional: Broil for 1–2 extra minutes for more caramelization.

Let cool slightly before serving. Spoon pan juices over the top.
