# Ingredients You’ll Need:

→ Cheesecake Batter

01 - 16 ounces cream cheese, room temperature
02 - 1/2 cup white sugar
03 - 2 large eggs
04 - 1 teaspoon vanilla extract
05 - Neon green food coloring, to taste

→ Oreo Cookie Crust

06 - 1 cup crushed Oreos (about 10-11 cookies)
07 - 2 1/2 tablespoons melted unsalted butter

08 - Whipped cream for decoration

# How to Make It:

01 - Heat your oven to 350°F (175°C) and put paper liners in a regular muffin tin.
02 - Grind Oreos in a food processor till you get fine crumbs. Mix in the melted butter and blend till everything sticks together.
03 - Divide the Oreo mixture between the paper cups and push down hard to make a solid bottom layer.
04 - In a bowl, whip the room temperature cream cheese with sugar until it's smooth. Beat in eggs one by one, then add vanilla, mixing just enough to combine.
05 - Add neon green food coloring and mix until you get a bright Grinch-like green color.
06 - Put about 1/4 cup of the green cheesecake mix into each paper liner, making sure they're all filled equally.
07 - Pop them in the hot oven for 15-17 minutes, or until the middles wobble slightly but the edges look firm.
08 - Take them out and let them cool completely in the pan. Then move the cheesecakes to the fridge and chill until they're totally set.
09 - If you want, put a dollop of whipped cream and some sprinkles on top of each mini cheesecake before serving.
