Heat your oven to 350°F (175°C) and put paper liners in a regular muffin tin.

Grind Oreos in a food processor till you get fine crumbs. Mix in the melted butter and blend till everything sticks together.

Divide the Oreo mixture between the paper cups and push down hard to make a solid bottom layer.

In a bowl, whip the room temperature cream cheese with sugar until it's smooth. Beat in eggs one by one, then add vanilla, mixing just enough to combine.

Add neon green food coloring and mix until you get a bright Grinch-like green color.

Put about 1/4 cup of the green cheesecake mix into each paper liner, making sure they're all filled equally.

Pop them in the hot oven for 15-17 minutes, or until the middles wobble slightly but the edges look firm.

Take them out and let them cool completely in the pan. Then move the cheesecakes to the fridge and chill until they're totally set.

If you want, put a dollop of whipped cream and some sprinkles on top of each mini cheesecake before serving.
