Greek Chicken Marinade (Printable Version)

# What You’ll Need:

→ For the Marinade

01 - 1.5 lbs boneless, skinless chicken breasts
02 - 1/4 cup olive oil
03 - Juice of 2 lemons
04 - Zest of 1 lemon
05 - 3 cloves garlic, minced
06 - 1 tsp dried oregano
07 - 1 tsp dried thyme
08 - 1 tsp salt
09 - 1/2 tsp black pepper

→ For Garnish

10 - Fresh parsley, chopped
11 - 1-2 lemons, sliced (for grilling)

# Steps to Follow:

01 - In a medium bowl, combine olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and black pepper. Whisk until well combined.
02 - Place chicken breasts in a large zip-lock bag or shallow dish. Pour the marinade over chicken, ensuring it's evenly coated. Seal tightly if using a bag or cover with plastic wrap if using a dish. Refrigerate for at least 2 hours, preferably overnight.
03 - Preheat grill to medium-high heat. Remove chicken from marinade, discarding the leftover liquid. Grill chicken breasts for 6-8 minutes per side until internal temperature reaches 75°C. Add lemon slices to the grill during the final minutes to caramelize.
04 - Remove chicken from grill and rest for a few minutes to retain juices. Slice chicken, garnish with fresh chopped parsley, and serve with grilled lemon slices.

02 - Discard any leftover marinade that has been in contact with raw chicken.
