Get your oven warmed up to 400 degrees Fahrenheit.

Give those sweet potatoes a good wash and scrub. You can peel them or leave the skin on. Cut them up into even wedges.

Toss the potato wedges in a big bowl with olive oil first. Then add the garlic, paprika, salt, black pepper, and Italian seasoning. Mix it all around so every piece is covered.

Spread the wedges out in a single layer on a baking sheet lined with parchment paper. Pop them in the oven for 20 minutes.

Turn the wedges over after 20 minutes and bake for another 10 to 15 minutes. They should come out golden and soft.

Take the tray out, sprinkle the Parmesan cheese all over, and stick it back in the oven for 5 minutes so the cheese melts and crisps up a bit.

Top with fresh parsley and enjoy warm with some yogurt dip, garlic aioli, or classic ketchup.
