Spray your baking dish with nonstick spray and preheat the oven to 375°F.

In a pan over medium heat, soften the diced onions for about 5 minutes.

Grab a big bowl and stir together the ground chicken, sautéed onions, garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until it’s all mixed well.

Mold the mixture into a loaf and put it in the greased baking pan.

Evenly spread the leftover Parmesan on top. You can toss a bit of paprika or some Italian herbs on it if you like for extra flavor.

Bake for 45 to 50 minutes till it hits 165°F inside. Let it sit for 10 minutes before slicing so it’s juicy.
