01 - 1 pound ground chicken
02 - 4 fresh garlic cloves, finely chopped
03 - 1 cup Parmesan cheese, grated, split
04 - 1 cup Italian-seasoned or plain breadcrumbs
05 - 2 large eggs
06 - 1 medium onion, chopped
07 - 2 tablespoons low-sodium soy sauce
08 - 1 teaspoon salt
09 - 1 teaspoon black pepper

# How to Make It:

01 - Spray your baking dish with nonstick spray and preheat the oven to 375°F.
02 - In a pan over medium heat, soften the diced onions for about 5 minutes.
03 - Grab a big bowl and stir together the ground chicken, sautéed onions, garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until it’s all mixed well.
04 - Mold the mixture into a loaf and put it in the greased baking pan.
05 - Evenly spread the leftover Parmesan on top. You can toss a bit of paprika or some Italian herbs on it if you like for extra flavor.
06 - Bake for 45 to 50 minutes till it hits 165°F inside. Let it sit for 10 minutes before slicing so it’s juicy.

# Extra Suggestions:

01 - Letting the meatloaf chill after baking helps the juices stay inside so every bite feels tender and moist.
