Turn the oven to 350°F (175°C) to heat it up. Spray a 9×5-inch loaf pan with nonstick cooking spray.

Stir the brown sugar and cinnamon together in a small dish. Coat the apple chunks with 2 tablespoons of white sugar, then set both aside.

Whip together the butter and the leftover granulated sugar in a big bowl until fluffy. Toss in eggs one by one, stirring after each. Add the vanilla at the end.

Combine the flour, baking powder, and a small bit of salt in another bowl.

Slowly add the dry mix to the butter mixture, switching between the dry ingredients and the milk. Don’t forget to start and finish with the dry ingredients. Mix just enough to combine.

In the greased loaf pan, spread out half of the batter. Sprinkle half of the cinnamon sugar over it, followed by half of the apples. Repeat with the rest of the batter, cinnamon sugar, and apple bits.

Pop the pan into the oven and bake for about 50-60 minutes. A toothpick stuck in the middle should come out clean when it’s done.

After baking, leave the bread in the pan for about 10 minutes, then move it to a rack to cool completely. Mix powdered sugar with a splash of milk in a bowl until it’s thin enough to drizzle. Pour this over the cooled bread.
