Heat a large skillet over medium heat. Add ground beef and onion, cook until beef is fully browned and onions are tender. Drain excess fat from the pan.

Stir in salt, black pepper, garlic powder, ketchup, yellow mustard, and dill pickle relish. Cook the mixture for an additional 1 to 2 minutes, then remove from the heat.

Let the beef mixture cool slightly, then fold in shredded cheddar cheese until evenly distributed.

Place an egg roll wrapper on a sanitized work surface with one corner facing you.

Spoon about 2 tablespoons of the cheeseburger mixture into the center of the wrapper. Fold the bottom corner upward over the filling, tuck in the sides, and roll tightly. Seal the edge with a dab of water.

Continue filling and rolling each wrapper until all the beef mixture is used.

Pour enough vegetable oil into a deep skillet or heavy pot to reach a depth of 2 inches. Heat oil to 350°F (177°C).

Working in batches, fry eggrolls for 2 to 3 minutes per side until golden brown and crispy. Adjust heat as needed to maintain oil temperature.
