Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish with non-stick spray.

In a large bowl, combine the diced apples, sugar, cinnamon, nutmeg, and cornstarch. Mix well to ensure the apples are evenly coated.

Open the cans of cinnamon rolls and set aside the icing for later use. Cut each roll into ¼-inch slices. On a floured surface, roll each slice into a thin, flat circle.

Layer the bottom and sides of the prepared baking dish with the flattened cinnamon roll pieces, pressing them together to form a crust.

Spread half of the apple mixture over the cinnamon roll crust. Drizzle with 2-3 tablespoons of caramel sauce.

Add another layer of flattened cinnamon roll pieces over the apples. Spread the remaining apple mixture on top and drizzle with additional caramel sauce.

Finish with a final layer of flattened cinnamon roll pieces on top.

Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden brown.

Allow the lasagna to cool for at least 30 minutes. Drizzle with the reserved icing before serving.
