01 - 1 packed cup grated zucchini, squeezed dry
02 - 1 large egg
03 - 1/4 medium onion, finely minced
04 - 1/4 cup shredded sharp cheddar cheese
05 - 1/3 cup seasoned breadcrumbs
06 - 1/4 teaspoon kosher salt
07 - Black pepper, to taste
08 - Cooking spray for pan

# Steps to Follow:

01 - Preheat the oven to 400°F (200°C) and spray a 24-cup mini muffin tin generously.
02 - Squeeze the grated zucchini dry using a clean towel to remove every drop of moisture.
03 - In a medium bowl, mix the zucchini, egg, onion, cheese, breadcrumbs, salt, and black pepper.
04 - Fill each muffin cup with the mixture, pressing down firmly.
05 - Bake for 16–18 minutes until golden and crisp at the edges.
06 - Let the tots cool for 5 minutes before gently removing them with a knife or spatula.

# Additional Notes:

01 - If no muffin tin is available, shape spoonfuls of the mixture onto a lined sheet.
02 - If the mixture appears too wet, add breadcrumbs 1 tablespoon at a time.
03 - For extra crunch, broil the tots for the final 2 minutes of baking.
