Get your oven nice and warm at 350°F (175°C) and put some parchment paper on two cookie sheets.

Grab a big bowl and mix your soft butter with both brown and white sugars until they're super smooth and fluffy.

Pour in the vanilla and maple syrup, then stir everything together until it looks well mixed.

In another bowl, mix your flour, baking soda, salt, and cinnamon together.

Slowly add your flour mix to the butter mixture, stirring just enough to combine. Don't mix too much.

Drop spoonfuls of dough onto your lined cookie sheets, making sure they're about 2 inches apart from each other.

Stick them in the oven for 10-12 minutes until the edges look done but the middle stays soft. Let them cool on the tray for 5 minutes before moving to a wire rack.

Put your white chocolate in a bowl over a pot with a bit of simmering water. Stir until it's all melted and smooth.

After your cookies are totally cool, dip half of each cookie into the melted white chocolate. Put them on parchment paper and wait for the chocolate to harden.
