Place 4 slices sourdough bread on a flat surface like a cutting board or plate. Spread ½ tablespoon honey mustard evenly onto one side of each slice. Divide white cheddar cheese slices in half to create 4 smaller slices and place one slice on each of the 4 bread slices. Layer 2 slices of deli turkey on top of the cheese on 2 bread slices. Add desired number of thin tomato slices and ¼ cup baby spinach to each turkey layer. Place 2 strips of cooked bacon on top of the cheese on the other 2 bread slices. Close each sandwich by placing the bacon-topped bread half down onto the turkey-topped bread half. Each sandwich should have the following layers: sourdough slice, honey mustard, half-slice cheese, 2 turkey slices, tomato, ¼ cup spinach, 2 bacon slices, half-slice cheese, honey mustard, sourdough slice.

Spread ½ tablespoon softened butter on the outward-facing side of each bread slice (4 sides total). Heat a large skillet over medium heat. Place assembled sandwiches in the skillet. Toast one side of each sandwich for 3 to 4 minutes or until golden brown. Carefully flip the sandwiches and toast the other side for another 3 to 4 minutes, ensuring the cheese melts completely. Remove from skillet and transfer to serving plates. Serve warm with preferred sides.
