# How to Make It:

01 - Prepare vermicelli noodles according to package directions. Drain and rinse with cold water, then set aside.
02 - Heat avocado oil in a large stockpot over medium heat. Add sliced red onion, red bell pepper, and shiitake mushrooms. Sauté until tender, about 4 to 6 minutes.
03 - Stir in minced garlic and grated ginger. Sauté until fragrant, 30 to 60 seconds.
04 - Add Thai red curry paste and tomato paste to the pot. Cook, stirring, for 1 to 2 minutes until the mixture is aromatic.
05 - Pour in vegetable broth, coconut milk, vegan fish sauce, and brown sugar. Increase heat to bring to a gentle boil, then reduce to low and simmer uncovered for 10 minutes.
