In a large mixing bowl, combine the Monterey Jack cheese, Pepper Jack cheese, and diced jalapeños. Stir until thoroughly blended.

Portion approximately 1 tablespoon of the cheese mixture and roll into even balls. Arrange on a parchment-lined tray. Repeat until all of the mixture is used.

Place the tray in the freezer and chill the cheese balls for a minimum of 30 minutes for optimal firmness during frying.

Organize three separate shallow bowls: one with the flour, one with whisked eggs and milk, and one with the Italian-style breadcrumbs.

Coat each chilled cheese ball first in flour, then dip into the egg-milk mixture, followed by a thorough coating in breadcrumbs. Set aside each coated ball.

Heat vegetable oil in a deep fryer or heavy skillet to 350°F. Fry a few bites at a time for 2 to 3 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
