Texas Roadhouse Rattlesnake Bites (Print-Friendly Version)

Monterey Jack, Pepper Jack, jalapeños, and crispy coating create bold, zesty appetizers for any gathering.

# Ingredients You’ll Need:

→ Cheeses

01 - 1 1/2 cups shredded Monterey Jack cheese
02 - 1 1/2 cups shredded Pepper Jack cheese

→ Vegetables

03 - 1 to 2 jalapeños, finely diced, seeds removed

→ Coating and Frying

04 - 1 cup all-purpose flour
05 - 2 large eggs
06 - 1 cup whole milk
07 - 2 cups Italian-style breadcrumbs
08 - Vegetable oil, for frying

# How to Make It:

01 - In a large mixing bowl, combine the Monterey Jack cheese, Pepper Jack cheese, and diced jalapeños. Stir until thoroughly blended.
02 - Portion approximately 1 tablespoon of the cheese mixture and roll into even balls. Arrange on a parchment-lined tray. Repeat until all of the mixture is used.
03 - Place the tray in the freezer and chill the cheese balls for a minimum of 30 minutes for optimal firmness during frying.
04 - Organize three separate shallow bowls: one with the flour, one with whisked eggs and milk, and one with the Italian-style breadcrumbs.
05 - Coat each chilled cheese ball first in flour, then dip into the egg-milk mixture, followed by a thorough coating in breadcrumbs. Set aside each coated ball.
06 - Heat vegetable oil in a deep fryer or heavy skillet to 350°F. Fry a few bites at a time for 2 to 3 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
07 - Arrange the bites on a platter and accompany with ranch dressing or a preferred dipping sauce.

# Extra Suggestions:

01 - Freezing the balls before breading and frying helps them hold their shape and prevents cheese from leaking out during cooking.
