Roadhouse Chicken in Butter (Printable Version)

# What You’ll Need:

01 - 1.5 lbs chicken thighs without bones and skin, chopped into bits
02 - 2 tbsp cooking oil
03 - 1 medium onion, diced small
04 - 3 cloves garlic, crushed
05 - 1 tbsp ginger root, shredded
06 - 1 tbsp garam masala
07 - 1 tsp smoky paprika
08 - 1 tsp cumin powder
09 - 1/2 tsp turmeric
10 - 1/4 tsp cayenne pepper (if you want spice)
11 - 1/2 tsp salt
12 - 1/4 tsp ground black pepper
13 - 1 (6 oz) can tomato paste
14 - 1 cup tomato sauce
15 - 1/2 cup chicken stock
16 - 1 cup heavy cream
17 - 2 tbsp butter
18 - Handful of cilantro leaves for topping
19 - Cooked basmati rice or naan bread for the side

# Steps to Follow:

01 - Pour oil into a big skillet over medium-high heat. Toss in chicken and brown on each side until golden, roughly 6–8 minutes. Take out and put aside.
02 - Using the same pan, throw in diced onion and cook for 3–4 minutes until they're soft.
03 - Throw in garlic, ginger, and all your spices. Let them cook for 1–2 minutes till you can smell their aroma.
04 - Mix tomato paste in and cook for a minute. Pour in tomato sauce and chicken stock next. Stir everything together.
05 - Put chicken back in the pan. Let it bubble gently for 10–12 minutes until the sauce gets thicker and chicken's fully cooked.
06 - Turn down the heat and pour in heavy cream and butter. Cook another 3–5 minutes until everything's mixed and looks creamy.
07 - Sprinkle cilantro on top and serve hot with rice or warm naan bread.
