Teriyaki Shrimp Pineapple Rice (Printable Version)

# What You’ll Need:

→ Teriyaki Sauce

01 - 1/2 cup soy sauce (low sodium)
02 - 1/4 cup water
03 - 3 tablespoons brown sugar (dark or light)
04 - 1 tablespoon honey
05 - 2 tablespoons mirin (rice wine or dry sherry)
06 - 2 cloves garlic, minced
07 - 1 tablespoon fresh ginger, grated
08 - 1 teaspoon sesame oil
09 - 1 tablespoon cornstarch mixed with 2 tablespoons cold water

→ Shrimp

10 - 1 pound large shrimp (21–25 count), peeled and deveined
11 - 1 tablespoon vegetable oil
12 - Salt and pepper to taste
13 - 1/2 teaspoon red pepper flakes (optional)

→ Pineapple Rice

14 - 2 cups jasmine rice, rinsed
15 - 2 1/2 cups water
16 - 1 tablespoon butter
17 - 1/2 teaspoon salt
18 - 1 cup fresh pineapple, diced small
19 - 3 green onions, thinly sliced
20 - 1/4 cup cilantro, chopped
21 - 1/2 red bell pepper, diced small
22 - Juice of 1 lime
23 - 1 tablespoon soy sauce

→ Assembly and Garnish

24 - 1 ripe avocado, sliced
25 - Extra pineapple chunks
26 - Sesame seeds (black and white)
27 - Extra sliced green onions
28 - Sriracha or chili sauce (optional)
29 - Lime wedges
30 - Ring molds or cleaned empty cans (3-4 inches in diameter)

# Steps to Follow:

01 - Combine soy sauce, water, brown sugar, honey, mirin, minced garlic, and grated ginger in a small saucepan over medium heat. Stir until the sugar dissolves. Bring to a simmer, then mix the cornstarch with cold water and stir into the sauce. Cook until thickened. Remove from heat and stir in sesame oil.
02 - Season shrimp with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat. Add shrimp and cook for 2 minutes per side, or until pink and cooked through. If desired, add red pepper flakes for heat. Brush or toss shrimp with prepared teriyaki sauce.
03 - In a medium saucepan, combine rinsed jasmine rice, water, butter, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let stand for 5 minutes. Fluff with a fork, then stir in pineapple, green onions, cilantro, red bell pepper, lime juice, and soy sauce.
04 - Use ring molds or cleaned empty cans to layer the ingredients. Start with a layer of pineapple rice, followed by a layer of teriyaki shrimp, and top with avocado slices. Gently press down each layer to create a compact stack. Carefully remove the ring mold.
05 - Top each stack with sesame seeds, extra green onions, and additional pineapple chunks. Serve with lime wedges and a drizzle of Sriracha or chili sauce, if desired.
