01 - 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
02 - 1/2 cup sweet chili sauce
03 - 2 tbsp low sodium soy sauce
04 - 1 tbsp honey
05 - 1 tbsp cornstarch
06 - 1/4 cup water
07 - 2 tbsp olive oil
08 - 1 red bell pepper, sliced
09 - 1 green bell pepper, sliced
10 - 1 small onion, sliced
11 - 2 cloves garlic, minced
12 - Salt and pepper to taste
13 - Sesame seeds (optional, for garnish)
14 - Chopped green onions (optional, for garnish)

# Steps to Follow:

01 - In a small bowl, mix sweet chili sauce, soy sauce, honey, and water. Set aside.
02 - Toss chicken pieces with cornstarch until lightly coated.
03 - Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes, stirring occasionally, until golden brown and cooked through. Remove chicken and set aside.
04 - In the same skillet, add sliced peppers, onion, and garlic. Stir-fry for 3-4 minutes until vegetables start to soften.
05 - Return chicken to the skillet and pour in the sweet chili sauce mixture. Stir well to coat chicken and veggies. Let it simmer for 2-3 minutes until the sauce thickens slightly.
06 - Taste and adjust seasoning with salt and pepper if needed. Garnish with sesame seeds and chopped green onions if desired. Serve hot over rice or noodles.

# Additional Notes:

01 - For a spicier dish, consider using a hot chili sauce or adding red chili flakes.
