Preheat oven to 375°F. Lightly grease a 9x13 baking dish.

Cook jumbo pasta shells according to package directions. Drain and set aside to cool.

In a skillet, cook ground beef over medium heat until browned. Drain excess grease and stir in diced chicken ham if using.

In a large bowl, mix ricotta, cottage cheese, 1 cup mozzarella, Parmesan, egg, Italian seasoning, garlic powder, onion powder, salt, and pepper.

Stir in half of the cooked beef mixture into the cheese filling.

Spread a thin layer of marinara sauce on the bottom of the baking dish.

Stuff each pasta shell with the cheese and meat mixture and place them in the dish.

Pour the remaining marinara sauce over the stuffed shells. Sprinkle with extra mozzarella cheese on top.

Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes, until cheese is melted and bubbly.

Garnish with parsley and serve hot.
