In a small bowl, combine cream cheese, granulated sugar, and vanilla extract. Beat until mixture is smooth and free of lumps.

On a lightly floured surface, unfold thawed puff pastry. Cut the sheet into 6 equal rectangles.

Lightly score a 1/2 inch border around each pastry rectangle, ensuring not to cut all the way through to help create a crust.

Within each bordered area, spread a spoonful of the cream cheese mixture. Layer with a teaspoon of strawberry jam and top with a few fresh strawberry slices.

In a small bowl, beat the egg together with water. Brush the edges of each pastry with the egg wash.

Transfer assembled pastries to the prepared baking sheet. Bake for 15 to 18 minutes, or until the pastry is puffed and golden brown.
