Preheat the oven to 350°F (175°C).

In a large mixing bowl, combine the strawberry cake mix, eggs, oil, and vanilla. Mix well using a fork or hand mixer.

Line a baking sheet with parchment paper. Use a cookie scoop to create 1-tablespoon-sized dough balls and place them 2 inches apart on the baking sheet.

Bake for 10 minutes, or until the edges start to brown. Do not overbake.

Remove from the oven and let the cookies cool on the baking sheet.

Blend the strawberries and lemon juice in a food processor or blender until smooth. Mix this with the powdered sugar until smooth. Adjust consistency by adding more powdered sugar if too thin or more lemon juice/water if too thick.

Transfer the cookies to a cooling rack. Spoon the glaze over the cookies once they have cooled.

Once fully cooled, sprinkle the cookies with powdered sugar, if desired.
