Strawberry Cookies Lemon Glaze (Printable Version)

# What You’ll Need:

01 - 1 box strawberry cake mix
02 - 2 eggs
03 - 1/4 cup canola oil or vegetable oil
04 - 1 teaspoon pure vanilla extract

→ Strawberry Lemon Glaze

05 - 2 cups powdered sugar
06 - 1/3 cup strawberries, chopped
07 - 1 tablespoon lemon juice or water

# Steps to Follow:

01 - Preheat the oven to 350°F (175°C).
02 - In a large mixing bowl, combine the strawberry cake mix, eggs, oil, and vanilla. Mix well using a fork or hand mixer.
03 - Line a baking sheet with parchment paper. Use a cookie scoop to create 1-tablespoon-sized dough balls and place them 2 inches apart on the baking sheet.
04 - Bake for 10 minutes, or until the edges start to brown. Do not overbake.
05 - Remove from the oven and let the cookies cool on the baking sheet.
06 - Blend the strawberries and lemon juice in a food processor or blender until smooth. Mix this with the powdered sugar until smooth. Adjust consistency by adding more powdered sugar if too thin or more lemon juice/water if too thick.
07 - Transfer the cookies to a cooling rack. Spoon the glaze over the cookies once they have cooled.
08 - Once fully cooled, sprinkle the cookies with powdered sugar, if desired.

01 - You can skip the glaze and sprinkle powdered sugar directly on the baked cookies once cooled. For varied texture in the glaze, blend the strawberries to a puree or leave slightly larger fruit chunks.
