01 -
Preheat your oven to 350°F (175°C). Line a cookie sheet with a greased or non-stick baking mat and set aside.
02 -
In the bowl of an electric mixer, combine the strawberry cake mix, egg, almond extract, and melted butter. Mix until the dough is completely combined.
03 -
Scoop or roll the dough into 1 1/2-inch balls. Place the dough balls at least 2 inches apart on the prepared cookie sheet. Gently press the dough balls down with the palms of your hands to flatten them slightly.
04 -
Bake the cookies for approximately 8 to 9 minutes, or until they are set. Allow them to cool on the cookie sheet for a few minutes before carefully transferring them to a cooling rack to cool completely.
05 -
While the cookies are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, fresh strawberry puree, and milk. If the glaze is too thick, add a little more milk; if it's too thin, add a bit more powdered sugar and whisk until smooth.
06 -
Once the cookies are completely cooled, drizzle the strawberry glaze over them. Allow the glaze to set completely before storing the cookies in an airtight container.
