Mix together the ground chicken, chopped spinach, diced onion, crushed garlic, grated white cheddar, egg, breadcrumbs, salt, and black pepper in a big bowl. Stir everything gently until mixed well, but don't handle the meat too much.

Split the chicken mix into four equal parts and shape them into flat, round patties. Pop them in the fridge for about 15-20 minutes if you want them to stay together better.

Warm up a big non-stick pan or grill on medium heat. Cook the patties for about 5-6 minutes on each side, until they reach 165°F inside and the cheese has melted through the meat.
