01 - 4 oz frozen chopped spinach, thawed and thoroughly squeezed dry
02 - ½ cup marinated artichoke hearts, drained and chopped (about ¼ of a 12 oz jar)
03 - 1 cup shredded mozzarella or fontina
04 - 2–3 Tbsp cream cheese, softened
05 - 2 Tbsp grated Parmesan cheese
06 - 2–3 Tbsp mayonnaise
07 - ½ tsp garlic powder
08 - Pinch of crushed red pepper (optional)
09 - Salt and pepper, to taste

→ Bread and Cooking

10 - 4–8 slices sturdy bread (sourdough, Italian, whole wheat)
11 - Butter or olive oil, for grilling

# How to Make It:

01 - Combine the thawed and squeezed spinach, chopped artichoke hearts, mozzarella, cream cheese, Parmesan, mayonnaise, garlic powder, crushed red pepper (if using), salt, and pepper in a mixing bowl. Stir thoroughly until evenly mixed.
02 - Spread a thin and even layer of butter or mayonnaise on the outside of each slice of bread.
03 - Place approximately ½ cup of the prepared filling between two bread slices, ensuring the buttered or mayo-covered sides are on the outside.
04 - Heat a skillet over medium-low heat. Grill the sandwiches for 3–4 minutes per side, or until the bread is golden brown and the cheese filling is fully melted.
05 - Serve the sandwiches immediately while hot and gooey.
