Spicy Green Chili Beef Quesadillas (Printable Version)

# What You’ll Need:

→ Beef filling

01 - 1 lb (450 g) ground beef
02 - 1 small onion, finely chopped
03 - 2 cloves garlic, minced
04 - 1 (113 g) can diced green chilies
05 - 1 jalapeño, minced (optional, for extra heat)
06 - 1 tsp chili powder
07 - 1 tsp cumin
08 - ½ tsp smoked paprika
09 - ½ tsp salt (to taste)
10 - ¼ tsp black pepper

→ Quesadillas

11 - 8 medium flour tortillas
12 - 2 cups shredded Mexican blend cheese (or cheddar + Monterey Jack)
13 - 2 tbsp butter or oil (for frying)

→ Optional toppings

14 - Sour cream
15 - Guacamole
16 - Salsa or pico de gallo
17 - Fresh cilantro

# Steps to Follow:

01 - In a skillet over medium heat, cook the ground beef until browned, breaking it apart. Drain excess fat if needed. Add onion and garlic, sauté for 2–3 minutes until softened. Stir in diced green chilies, jalapeño (if using), chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another 3–4 minutes until fragrant. Remove from heat.
02 - Place a tortilla on a flat surface. Sprinkle cheese over half of the tortilla, then add a layer of the beef mixture, and top with more cheese. Fold the tortilla in half. Repeat with the remaining tortillas.
03 - Heat butter or oil in a skillet over medium heat. Cook each quesadilla for 2–3 minutes per side until golden and crispy, and cheese is melted.
04 - Slice the quesadillas into wedges. Serve hot with sour cream, guacamole, salsa, and fresh cilantro.
