In a skillet over medium heat, cook the ground beef until browned, breaking it apart. Drain excess fat if needed. Add onion and garlic, sauté for 2–3 minutes until softened. Stir in diced green chilies, jalapeño (if using), chili powder, cumin, smoked paprika, salt, and black pepper. Cook for another 3–4 minutes until fragrant. Remove from heat.

Place a tortilla on a flat surface. Sprinkle cheese over half of the tortilla, then add a layer of the beef mixture, and top with more cheese. Fold the tortilla in half. Repeat with the remaining tortillas.

Heat butter or oil in a skillet over medium heat. Cook each quesadilla for 2–3 minutes per side until golden and crispy, and cheese is melted.

Slice the quesadillas into wedges. Serve hot with sour cream, guacamole, salsa, and fresh cilantro.
