southern sweet potato cake (Print-Friendly Version)

Incredibly soft sweet potato cake topped with silky spiced frosting, great for special occasions.

# Ingredients You’ll Need:

→ Cake Batter

01 - 2 cups all-purpose flour
02 - 1 1/2 cups granulated sugar
03 - 1/2 cup light brown sugar
04 - 1 cup vegetable oil
05 - 4 large eggs
06 - 1 teaspoon vanilla extract
07 - 2 teaspoons baking powder
08 - 1 teaspoon baking soda
09 - 1 teaspoon ground cinnamon
10 - 1/2 teaspoon salt
11 - 1/2 teaspoon ground nutmeg

→ Frosting

12 - 8 ounces cream cheese, brought to room temperature
13 - 1/2 cup unsalted butter, brought to room temperature
14 - 4 cups powdered sugar
15 - 1 teaspoon vanilla extract
16 - 2 tablespoons milk

# How to Make It:

01 - Get your oven hot at 350°F (175°C). Coat two 9-inch round cake pans with grease and a thin layer of flour.
02 - Take a big bowl and mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt together until they're well blended.
03 - In another bowl, blend the granulated sugar, brown sugar, and vegetable oil until they're nicely combined. Drop in eggs one by one, making sure each is fully mixed before adding the next. Add the vanilla extract and stir it in.
04 - Slowly pour the dry stuff into your wet mixture, stirring gently just until everything comes together. Don't stir too much.
05 - Pour equal amounts of batter into each prepared pan. Let them bake for 25 minutes. You'll know they're done when a toothpick stuck in the middle comes out without wet batter.
06 - Take the pans out and let the cakes sit for 10 minutes. Then flip them onto wire racks and wait until they're totally cool.
07 - Using a large bowl, whip the cream cheese and butter together until they're fluffy and smooth. Slowly add the powdered sugar while mixing. Stir in the vanilla and milk until your frosting is easy to spread.
08 - Put one cake on your serving dish. Spread frosting on top of it. Place the second cake on top and cover everything with the rest of your frosting, including the sides.
09 - Cut into slices and enjoy when it's room temperature.
