04 - 1 small onion, diced
05 - 2 celery stalks, chopped
06 - 2 green onions, sliced, optional for garnish

→ Pantry

08 - 2 tablespoons olive oil
09 - 2 teaspoons Cajun seasoning, or to taste
10 - 1 teaspoon paprika
11 - 1/2 teaspoon dried thyme
12 - Salt and black pepper, to taste
13 - 3 cups cooked white rice
14 - 1/4 cup low sodium chicken broth

# How to Make It:

01 - Pat shrimp dry with paper towels. Season lightly with salt and Cajun seasoning.
02 - Heat 1 tablespoon olive oil in a large skillet over medium heat. Add shrimp in a single layer and cook for 2 to 3 minutes per side until pink and cooked through. Transfer shrimp to a plate and set aside.
03 - Add remaining 1 tablespoon olive oil to the skillet. Sauté diced green bell pepper, onion, celery, and garlic for 5 to 7 minutes until vegetables are softened.
04 - Add ground beef to the skillet with the vegetables. Cook, breaking it up with a spoon, until beef is fully browned. Drain excess fat if necessary.
05 - Stir in Cajun seasoning, paprika, dried thyme, salt, and black pepper. Mix thoroughly to combine flavors.
06 - Add cooked white rice and chicken broth to skillet. Stir to combine, cooking for about 5 minutes until mixture is heated through and flavors meld.
07 - Return cooked shrimp to the skillet. Gently fold into the rice mixture and cook for 2 more minutes to warm through.
08 - Top with sliced green onions if desired. Serve hot.

# Extra Suggestions:

01 - Use freshly cooked or day-old rice for best texture; adjust Cajun seasoning for desired spice level.
