Preheat grill to medium-high heat (about 400°F), or preheat your oven to 425°F.

In a large pot, boil potatoes for about 10-12 minutes until just tender. Drain and set aside.

Cut four large sheets of heavy-duty aluminum foil (about 12x18 inches each).

In a large bowl, combine shrimp, sausage, corn, and boiled potatoes. Drizzle with olive oil and sprinkle with Old Bay, garlic powder, salt, and pepper. Toss to coat evenly.

Divide the mixture evenly among the foil sheets. Fold the foil over the mixture and seal tightly to form packets.

Place foil packs on the grill or in the oven. Cook for 15-20 minutes, turning once if grilling, until shrimp is cooked through and everything is heated.

Carefully open the packs (watch out for steam!). Sprinkle with fresh parsley and serve with lemon wedges.
