Melt 1 tablespoon unsalted butter in a medium skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in honey, soy sauce, and apple cider vinegar, and bring to a simmer. Reduce heat to medium-low and let the mixture simmer for 3-5 minutes until slightly thickened, stirring occasionally.

Drizzle the honey garlic sauce over the sausage and vegetables on the sheet pan. Season with salt and pepper to taste, toss evenly to coat, and spread out in a single layer.
