Sheet Pan Sausage Sweet Potatoes (Print Version)

# Ingredients:

01 - 14 oz chicken or turkey sausage, cut into 1/2-inch slices
02 - 2 medium sweet potatoes, cut into 1/2-inch cubes
03 - 2 cups broccoli, cut into 1/2-inch florets

→ Honey Garlic Sauce

04 - 1 tablespoon unsalted butter
05 - 4 medium cloves garlic, minced
06 - 1/4 cup honey
07 - 1/4 cup low-sodium soy sauce
08 - 1 tablespoon apple cider vinegar
09 - Salt and pepper to taste

→ Garnish

10 - 2 tablespoons minced fresh parsley

# Instructions:

01 - Preheat oven to 400°F. Lightly grease a large sheet pan and arrange sausage slices, sweet potato cubes, and broccoli florets on it in a single layer.
02 - Melt 1 tablespoon unsalted butter in a medium skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in honey, soy sauce, and apple cider vinegar, and bring to a simmer. Reduce heat to medium-low and let the mixture simmer for 3-5 minutes until slightly thickened, stirring occasionally.
03 - Drizzle the honey garlic sauce over the sausage and vegetables on the sheet pan. Season with salt and pepper to taste, toss evenly to coat, and spread out in a single layer.
04 - Roast the sausage and vegetables in the preheated oven for 25-30 minutes until the vegetables are tender and lightly browned.
05 - Top the sausage and vegetables with fresh minced parsley. Serve warm.
