Saucy Beef Potatoes (Printable Version)

# What You’ll Need:

→ Potatoes

01 - 3 medium potatoes, peeled and cut into thick slices
02 - 1 tablespoon cooking oil (olive or similar)
03 - 1/2 teaspoon garlic seasoning
04 - 1/2 teaspoon ground black pepper
05 - 1/2 teaspoon sea salt
06 - Vegetable oil for frying

07 - 1 pound flank or sirloin steak, thinly sliced into strips
08 - 1 tablespoon light soy sauce

10 - 1/2 teaspoon freshly cracked black pepper
11 - 1 tablespoon neutral cooking oil (e.g., vegetable oil)
12 - 1/2 green bell pepper, julienned
13 - 1/2 red bell pepper, julienned
14 - 1 small onion, diced
15 - 2 cloves garlic, finely chopped
16 - 1 green chili, chopped if you'd like it spicy (optional)
17 - 2 tablespoons dark soy sauce
18 - 1 tablespoon thick oyster sauce
19 - 1 tablespoon hoisin sauce (optional for sweetness)
20 - 1/2 teaspoon white sugar
21 - 1/4 cup beef stock or water
22 - 1 teaspoon cornstarch stirred into 1 tablespoon water (makes a slurry)

# Steps to Follow:

01 - Throw the potato slices into salted boiling water for 5 minutes, then drain and let them dry well. Put oil into a pan and heat it over medium-high. Fry the slices until both sides are golden and crunchy, roughly 4-5 minutes on each side. Drain them on paper towels before sprinkling on garlic powder, salt, and black pepper.
02 - Combine the sliced beef with soy sauce, cornstarch, and a bit of black pepper in a bowl. Heat some oil in a hot pan, then toss in the beef. Brown the pieces in 2-3 minutes, then take them out and set them aside.
03 - Using the same pan, toss in garlic, onion, and chili (if you’re using it). Stir it all for about 1-2 minutes until it smells amazing. Add your red and green peppers next and cook for another couple of minutes.
04 - Whisk together dark soy sauce, oyster sauce, hoisin (if using), sugar, and the beef stock or water. Pour this mix into the pan, add the cornstarch slurry, and stir well. Put the cooked beef back in, mixing everything for 1-2 minutes until it’s all coated in a shiny sauce.
