Santa Fe Chicken Foil Packets (Printable Version)

# What You’ll Need:

01 - 4 chicken breasts (7-8 oz each)
02 - ½ cup shredded Mexican cheese or Monterey Jack
03 - 2 cups whole kernel corn
04 - 15 oz black beans, drained and rinsed
05 - ¾ cup salsa or 10 oz diced tomatoes with green chilies, drained
06 - 1 cup diced bell peppers (any color)
07 - ½ tsp chili powder
08 - Cilantro, tomatoes, and jalapenos for garnish
09 - Salt and pepper to taste

# Steps to Follow:

01 - Preheat the grill to medium-high heat.
02 - Place four large pieces of foil on a work surface and spray each with cooking spray. Place one chicken breast on each piece of foil and season with chili powder, salt, and pepper.
03 - Divide the black beans, salsa, corn, and diced bell peppers evenly over the chicken breasts.
04 - Fold the ends of each foil piece to seal the packets tightly.
05 - Place the foil packets on the grill, vegetable side down, and cook for about 10 minutes. Flip the packets and continue grilling for another 10-12 minutes, or until the chicken reaches an internal temperature of 165°F.
06 - Place the packets on a large baking pan. Open each packet, top with shredded cheese, and return to the grill on the baking pan until the cheese is melted.
07 - Garnish with cilantro, diced tomatoes, and jalapenos, then serve and enjoy.
