Heat your oven to 350°F. Put parchment paper or a silicone mat on your cookie sheet and set it off to the side.

Mix the butter (cold or room temp works fine), brown sugar, and regular sugar in a bowl until they're smooth and fully combined.

Throw in your eggs and vanilla. Beat everything until it's fluffy and all mixed together.

Add your flour, baking soda, baking powder, and salt to the mixture. Stir until you get a nice soft dough.

Mix in the salted caramel chips, white chocolate chips, and the soft caramel pieces if you're using them. Make sure they're spread out evenly in your dough.

Using a 1/4 cup scoop, drop big balls of dough onto your prepared sheet. Leave about 2 inches between each one.

Stick them in your hot oven for 30 to 45 minutes. They're done when the edges turn golden and the centers aren't gooey anymore.

Take the sheet out and let the cookies sit there for 5 minutes before moving them to a cooling rack to finish cooling off.
