Heat your oven to 350°F (175°C) and put parchment paper on your baking sheet.

Mix flour, baking powder, and salt together in a bowl.

Use a mixer to beat the soft butter and sugar for about 2-3 minutes until it looks pale and fluffy.

Stir in the egg, vanilla, and red food coloring until everything's blended and the color is even.

Slowly add the dry stuff to your butter mix, stirring just enough to form a dough.

Take some dough, flatten it in your palm, put a piece of white chocolate in the middle, and wrap the dough around it. Roll into balls and place them on your lined baking sheet.

Pop them in the hot oven for 30 to 45 minutes until they're set but still soft-looking on top.

When they're still warm, brush each cookie with water or sugar syrup. Roll them right away in shredded coconut so it sticks all over.
