# Ingredients You’ll Need:

01 - 1 cup room temperature unsalted butter
02 - 1/2 cup confectioners' sugar, with extra for dusting
03 - 1 teaspoon pure vanilla extract
04 - 2 1/4 cups all-purpose flour
05 - 1 cup almonds, ground to fine texture
06 - 1/4 teaspoon salt

→ Filling

07 - 1/2 cup smooth raspberry jam without seeds

# How to Make It:

01 - Set your oven to 350°F and put parchment paper on your baking sheet.
02 - Beat the room temperature butter with 1/2 cup confectioners' sugar in a big bowl until it's airy and pale.
03 - Mix in the vanilla extract thoroughly until it's all combined.
04 - In another bowl, mix the all-purpose flour, finely ground almonds, and salt together.
05 - Slowly mix the dry stuff into the butter mixture until you get a nice smooth dough.
06 - Take about a tablespoon of dough, roll it into a ball, make a dent in the middle, add 1/4 teaspoon raspberry jam, then close the dough around it and place on your lined baking sheet.
07 - Put them in the middle of the oven for 30 to 45 minutes until they're firm and the bottoms look slightly golden.
08 - Let the cookies cool a bit, then roll them in confectioners' sugar. For extra sweetness, roll them again after they've cooled completely.

# Extra Suggestions:

01 - Add a fresh sprinkle of confectioners' sugar right before you serve the cookies for a prettier look.
