Set your oven to 350°F and put parchment paper on your baking sheet.

Beat the room temperature butter with 1/2 cup confectioners' sugar in a big bowl until it's airy and pale.

Mix in the vanilla extract thoroughly until it's all combined.

In another bowl, mix the all-purpose flour, finely ground almonds, and salt together.

Slowly mix the dry stuff into the butter mixture until you get a nice smooth dough.

Take about a tablespoon of dough, roll it into a ball, make a dent in the middle, add 1/4 teaspoon raspberry jam, then close the dough around it and place on your lined baking sheet.

Put them in the middle of the oven for 30 to 45 minutes until they're firm and the bottoms look slightly golden.

Let the cookies cool a bit, then roll them in confectioners' sugar. For extra sweetness, roll them again after they've cooled completely.
