In a large bowl, combine olive oil, minced garlic, parsley, black pepper, and lemon juice if using. Mix thoroughly to blend flavors.

Add chicken cubes to the marinade. Stir to coat evenly. Cover and refrigerate for a minimum of 30 minutes to allow flavors to penetrate.

If using wooden skewers, soak them in water for at least 15 minutes. Thread marinated chicken cubes onto skewers, leaving space between each piece for even cooking.

Preheat outdoor grill or grill pan over medium-high heat.

Place prepared skewers on grill. Cook for 12 to 15 minutes, turning occasionally, until chicken is golden and the internal temperature reaches 165°F.
