# Ingredients You’ll Need:

01 - 1 1/2 pounds ground beef
02 - 1/2 cup plain breadcrumbs
03 - 1/4 cup whole milk
04 - 1 large egg
05 - 1 teaspoon garlic powder
06 - 1 teaspoon onion powder
07 - 1 teaspoon kosher salt, or to taste
08 - 1/2 teaspoon freshly ground black pepper, or to taste

10 - 4 medium russet potatoes, peeled and cut into 1/2-inch cubes
11 - 2 tablespoons olive oil
12 - 1/2 teaspoon kosher salt, or to taste
13 - 1/4 teaspoon freshly ground black pepper
14 - Nonstick cooking spray or unsalted butter, for greasing baking dish

15 - 1 1/2 cups shredded cheddar cheese
16 - 1/4 cup chopped fresh parsley (optional)

# How to Make It:

01 - Preheat oven to 375°F (190°C) and lightly coat a 9x13-inch baking dish with nonstick cooking spray or butter.
02 - In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, garlic powder, onion powder, salt, black pepper, and ketchup if using. Mix until just combined.
03 - Shape mixture into approximately twenty 1 1/2-inch meatballs and set aside on a plate.
04 - In a separate bowl, toss potato cubes with olive oil, salt, and black pepper until evenly coated.
05 - Evenly distribute the seasoned potato cubes in the bottom of the prepared baking dish. Place the meatballs on top of the potatoes in a single layer.
06 - Cover the baking dish tightly with foil and bake in the preheated oven for 40 minutes.
07 - Remove the foil. Evenly sprinkle the shredded cheddar cheese over the meatballs and potatoes. Return the dish to the oven and bake uncovered for 10–15 minutes until the cheese is melted and bubbly, and the meatballs are cooked through.
08 - Allow to cool slightly. Sprinkle chopped parsley over the top, if desired, and serve warm.
