While the meatloaf bakes, place diced russet potatoes in a large pot, cover with water, and boil for approximately 15 minutes or until fork-tender. Drain and return to the pot.

Add 1/2 cup milk, unsalted butter, salt, and pepper to the drained potatoes. Mash until smooth and creamy; season to taste.

Remove the partially baked meatloaf from the oven. Carefully spread mashed potatoes in an even layer over the meatloaf base.

Evenly sprinkle shredded cheddar cheese over the potatoes, followed by crumbled turkey bacon and sliced green onions. Return to the oven and bake for an additional 15 minutes, or until cheese is melted and bubbly.
