Unfold thawed puff pastry sheets and lightly roll with a rolling pin to seal the creases. Cut each sheet into 16 equal squares for a total of 32 portions.

Coat a standard 24-cup muffin tin with nonstick spray. Press each pastry square firmly into a muffin cavity, forming a small cup shape.

Slice Brie into 32 pieces, approximately 1 inch each. If needed, freeze Brie for 15 minutes before slicing for cleaner cuts. Place a slice of brie in each pastry cup and top with 1 teaspoon of jam.

Transfer the muffin tin to an oven preheated to 350°F. Bake for 20 minutes, or until puff pastry is golden brown. Remove from the oven and allow to cool for several minutes before removing bites from the tin.
