In a large skillet over medium heat, cook ground beef with diced onion until beef is fully browned and onions are tender. Drain excess fat. Stir in garlic powder, Italian seasoning, salt, and pepper for even seasoning.
02 -
Add half of the pizza sauce to the skillet. Stir to combine thoroughly and simmer for 2 to 3 minutes. Remove from heat.
03 -
Arrange flour tortillas on a clean work surface. Spoon a portion of beef filling onto each tortilla. Top with several turkey pepperoni slices and a sprinkle of mozzarella cheese. Roll tortillas securely, placing seam side down in a greased 9x13-inch baking dish.
04 -
Pour remaining pizza sauce evenly over enchiladas. Sprinkle generously with additional mozzarella, Parmesan cheese, and extra pepperoni slices as desired.
05 -
Preheat oven to 375°F. Cover baking dish with aluminum foil and bake for 20 minutes. Remove foil and continue baking for 10 minutes, or until cheese is golden brown and bubbling.
