01 - 8 ounces wide rice noodles, fresh or dry, soaked according to package instructions
02 - 2 tablespoons vegetable oil
03 - 2 cloves garlic, minced
04 - 2 large eggs
05 - 8 ounces boneless chicken breast or beef, thinly sliced
06 - 2 cups Chinese broccoli or regular broccoli, chopped

07 - 2 tablespoons low-sodium soy sauce
08 - 1 tablespoon dark soy sauce or regular soy sauce
09 - 1 teaspoon oyster sauce (optional)
10 - 1/2 teaspoon granulated sugar
11 - Freshly ground black pepper, to taste

# How to Make It:

01 - Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast or beef and stir-fry until browned and cooked through. Remove the cooked meat from the pan and set aside.
02 - Add the remaining tablespoon of vegetable oil to the pan. Crack in the eggs and scramble until just set. Push the eggs to one side of the pan.
03 - Add the minced garlic and chopped broccoli to the pan. Stir-fry for 2 to 3 minutes until the broccoli is tender yet crisp.
04 - Add the prepared rice noodles, cooked protein, low-sodium soy sauce, dark soy sauce, oyster sauce if using, sugar, and pepper. Stir well to evenly coat all ingredients, allowing the noodles to caramelize slightly.
05 - Continue stir-frying until the ingredients are thoroughly combined and heated through. Serve immediately while hot.
