01 - 1/4 cup olive oil
02 - 3 yellow onions, thinly sliced
03 - 4 garlic cloves, minced
04 - 8 oz cremini mushrooms, sliced
05 - 1 tbsp fresh thyme

07 - 2 tbsp all purpose flour
08 - 2 cups beef broth or vegetable broth
09 - 2 cups water
10 - 12 oz dried orecchiette or other short cut pasta
11 - 1 tbsp sherry vinegar
12 - Salt and freshly ground black pepper to taste

# Steps to Follow:

01 - Heat olive oil in a large skillet over medium heat. When shimmering, add the onions along with a generous pinch of salt. Cook, stirring frequently, until deeply caramelized, approximately 25-30 minutes.
02 - Add the garlic, cremini mushrooms, and thyme to the skillet. Sauté for 3-4 minutes until the mushrooms begin to soften.
03 - Pour in the dry white wine to deglaze the skillet, scraping up any browned bits. Add the flour and cook for 2-3 minutes until thickened.
04 - Mix in the beef broth (or vegetable broth) and water. Season with salt and freshly ground black pepper. Bring to a boil, then add the pasta and cook for 8-10 minutes or until al dente.
05 - Turn off the heat and stir in the sherry vinegar. Serve warm with optional garnishes such as fresh herbs and toasted breadcrumbs.
