Mud Potatoes Dish (Printable Version)

# What You’ll Need:

01 - 6-8 brown Russets, cut into chunks
02 - 2 cups grated sharp cheddar
03 - 1 cup regular mayo
04 - 8 strips bacon, fried crispy and broken up
05 - 3 cloves garlic, finely chopped
06 - 1 medium onion, diced

# Steps to Follow:

01 - Turn oven to 325°F (163°C) and coat a 9×13-inch baking dish with a bit of oil.
02 - Throw the potato chunks, grated cheese, bacon bits, chopped garlic, and diced onion into your baking dish.
03 - Drop in the mayo and stir everything together until all your ingredients get nicely coated.
04 - Pop it in the oven without covering for about 1.5 hours, until you can easily stick a fork in the potatoes and the top turns golden with bubbles.
05 - Let it sit for 5-10 minutes before you dish it up warm.

# Additional Notes:

01 - Toss in some jalapeños or red pepper flakes if you want a kick.
02 - Try smoked gouda or pepper jack instead of cheddar for something different.
03 - After it's done, you can sprinkle on green onions, a dollop of sour cream, or some ranch.
04 - Mix in some cooked broccoli or chopped bell peppers for extra veggies.
