Turn oven to 325°F (163°C) and coat a 9×13-inch baking dish with a bit of oil.

Throw the potato chunks, grated cheese, bacon bits, chopped garlic, and diced onion into your baking dish.

Drop in the mayo and stir everything together until all your ingredients get nicely coated.

Pop it in the oven without covering for about 1.5 hours, until you can easily stick a fork in the potatoes and the top turns golden with bubbles.
