Cook jumbo pasta shells according to package instructions until al dente. Drain thoroughly.

In a large mixing bowl, combine shredded chicken, cottage cheese, softened cream cheese, sour cream, parmesan, 1 cup shredded mozzarella, and dried parsley. Mix until thoroughly incorporated.

Fill each cooked pasta shell with the prepared cheese and chicken mixture. Arrange stuffed shells in the prepared baking dish.

Pour Alfredo sauce evenly over the stuffed shells. Sprinkle with remaining 1/2 cup shredded mozzarella cheese.
