02 - 1 pound ground beef
03 - 1 medium onion, diced
04 - 3 cloves garlic, minced
05 - 1 bell pepper, diced
06 - 1 jalapeño, seeded and finely chopped (optional)
07 - 1 teaspoon ground cumin
08 - 1 teaspoon chili powder
09 - 1/2 teaspoon smoked paprika
10 - 1/2 teaspoon dried oregano

→ Liquids and Base

11 - 1 can diced tomatoes, 14.5 ounces, undrained
12 - 4 cups beef broth
13 - 1 cup water

→ Grains and Legumes

14 - 1/2 cup long-grain white rice
15 - 1 can black beans, 15 ounces, drained and rinsed

→ Vegetables and Garnish

16 - 1 cup frozen corn
17 - Salt and pepper, to taste
18 - 1/4 cup fresh cilantro, chopped

# How to Make It:

01 - In a large pot or Dutch oven, heat olive oil over medium-high heat. Add ground beef and cook until thoroughly browned, breaking it into small pieces as it cooks. Drain any rendered fat before proceeding.
02 - Add diced onion, bell pepper, and optional jalapeño to the pot. Sauté for 5 minutes until the vegetables are softened. Add minced garlic and cook for an additional 1 to 2 minutes until fragrant.
03 - Sprinkle in the ground cumin, chili powder, smoked paprika, and dried oregano. Stir continuously for 1 minute to release the flavors. Add the undrained diced tomatoes and mix thoroughly.
04 - Pour in beef broth and water. Increase heat to bring the mixture to a boil. Stir in long-grain white rice, then reduce the heat to low and simmer uncovered for about 15 minutes until the rice is just tender.
05 - Gently incorporate the drained black beans and frozen corn. Continue to simmer for an additional 5 minutes until both are heated through and the flavors meld.
06 - Taste and adjust with salt and freshly ground black pepper as needed. Stir in freshly chopped cilantro just before serving.
07 - Divide the soup among bowls and serve hot with optional toppings such as shredded cheese, sour cream, sliced avocado, crispy tortilla strips, or extra lime wedges.

# Extra Suggestions:

01 - For deeper flavor, brown the beef thoroughly and toast spices before adding liquids.
02 - Adjust the level of heat by including or omitting the jalapeño and tailoring chili powder to preference.
