Place two bread slices, buttered side down, onto the skillet. Distribute chopped sun-dried tomatoes evenly over each slice and press gently.

Sprinkle half the feta and cheddar cheeses over the tomatoes, layer with sautéed spinach, then top with remaining feta and cheddar.

Sprinkle each stack with oregano and chili flakes. Place remaining bread slices on top, buttered side facing outward.

Cook sandwiches over medium heat for 4 to 5 minutes per side, using a spatula to press lightly, until golden brown and cheese is melted.
