# What You’ll Need:

01 - 2 cups mashed potatoes
02 - 1 large egg, beaten
03 - 1 cup shredded cheddar cheese
04 - 1/4 cup grated Parmesan cheese
05 - 1/4 cup chopped green onions
06 - 1/2 teaspoon garlic powder
07 - Salt, to taste
08 - Pepper, to taste
09 - 1/2 cup breadcrumbs
10 - Cooking spray or a light amount of oil for greasing

# Steps to Follow:

01 - Preheat the oven to 400°F (200°C). Lightly grease a muffin tin or line with paper cups.
02 - Combine mashed potatoes, beaten egg, cheddar cheese, Parmesan cheese, chopped green onions, garlic powder, salt, and pepper in a large bowl. Mix until evenly distributed.
03 - Scoop the mixture evenly into the prepared muffin tin, filling each cup nearly to the top.
04 - Sprinkle breadcrumbs evenly over the top of each portion and lightly spray the tops with cooking spray to enhance browning.
05 - Bake in the preheated oven for 20–25 minutes, or until the tops are golden brown and set.
06 - Allow the puffs to cool for a few minutes before removing them from the muffin tin. Serve warm.
