01 -
Place turkey bacon strips in a skillet over medium heat and cook until crispy. Transfer to a paper towel-lined plate and allow to cool, then chop into small pieces.
02 -
In the same skillet, add ground beef and finely chopped onion. Cook over medium heat until beef is browned and onion is tender, about 8 to 10 minutes. Season with salt and pepper. Drain excess fat.
03 -
Reduce heat to low. Add mayonnaise, ketchup, yellow mustard, and maple syrup to the beef mixture. Stir to combine thoroughly. Mix in cooked turkey bacon bits and cook for an additional 2 minutes, stirring frequently. Remove from heat.
04 -
Lay each flour tortilla flat. Evenly distribute a layer of cheddar and mozzarella cheese on one side. Spoon some beef mixture on top of the cheese, then sprinkle another layer of cheese. Fold the tortilla in half to encase the filling.
05 -
Spray a clean skillet with non-stick spray or melt a small amount of butter. Cook each filled tortilla over medium heat for 1 to 2 minutes per side, until cheese is melted and tortilla is golden brown.
06 -
Transfer cooked quesadillas to a cutting board. Slice each into wedges and serve warm with desired accompaniments such as pickles, ranch dressing, or extra ketchup.
