Voodoo Fries Louisiana-style (Printable Version)

# What You’ll Need:

→ Fries

01 - 4 big russet potatoes, roughly 2 pounds
02 - 1 teaspoon salt
03 - 1 teaspoon paprika
04 - ½ teaspoon cayenne pepper, tweak based on how spicy you want it
05 - ½ teaspoon black pepper
06 - Splash of olive oil

→ Toppings

07 - 1 cup grated cheddar cheese
08 - ½ cup bacon bits from about 4 cooked strips
09 - ¼ cup diced green onions

→ Voodoo Sauce

10 - ¼ cup sour cream
11 - ¼ cup mayo
12 - 1 tablespoon hot sauce, add more or less for your taste
13 - 1 clove garlic, crushed

# Steps to Follow:

01 - Set your oven to 425°F (220°C).
02 - Clean and strip the potato skins. Slice them into skinny fries about ¼ inch wide.
03 - Drop the cut fries in a pot with cold water and throw in 1 teaspoon of salt. Let it come to a boil and cook them for 5 minutes. Drain well and dry them off.
04 - Lay the fries flat on a big baking tray. Add a splash of olive oil and dust with paprika, cayenne, and black pepper. Mix them up so they're all coated.
05 - Pop them in the hot oven for 20 minutes until they're golden and crunchy, flipping them over halfway.
06 - In a bowl, stir together sour cream, mayo, hot sauce, and crushed garlic until it's all smooth.
07 - When fries are done, take them out and scatter cheese, bacon pieces, and green onions on top.
08 - Put the tray back in the oven for 5 more minutes until the cheese gets all bubbly and melted.
09 - Serve while they're hot with the voodoo sauce drizzled over. Dig in!

01 - Want it veggie-friendly? Skip the bacon and toss on some cooked mushrooms or other veggies instead.
02 - You can make it milder or spicier by changing how much cayenne and hot sauce you use.
