Set your oven to 425°F (220°C).

Clean and strip the potato skins. Slice them into skinny fries about ¼ inch wide.

Drop the cut fries in a pot with cold water and throw in 1 teaspoon of salt. Let it come to a boil and cook them for 5 minutes. Drain well and dry them off.

Lay the fries flat on a big baking tray. Add a splash of olive oil and dust with paprika, cayenne, and black pepper. Mix them up so they're all coated.

Pop them in the hot oven for 20 minutes until they're golden and crunchy, flipping them over halfway.

In a bowl, stir together sour cream, mayo, hot sauce, and crushed garlic until it's all smooth.

When fries are done, take them out and scatter cheese, bacon pieces, and green onions on top.

Put the tray back in the oven for 5 more minutes until the cheese gets all bubbly and melted.

Serve while they're hot with the voodoo sauce drizzled over. Dig in!
