Loaded Potato Meatloaf Casserole (Print-Friendly Version)

# Ingredients You’ll Need:

→ Meat Mixture

01 - 2 pounds ground beef
02 - 1 cup plain breadcrumbs
03 - 2 large eggs
04 - 1/2 cup whole milk
05 - 1 teaspoon garlic powder
06 - 1 teaspoon onion powder
07 - 1/2 teaspoon salt
08 - 1/2 teaspoon ground black pepper

→ Potato Topping

09 - 3 cups mashed potatoes (from about 5 medium russet potatoes, peeled, cooked, and mashed)
10 - 1/2 cup sour cream

→ Toppings

11 - 1 cup shredded cheddar cheese
12 - 1/2 cup green onions, finely chopped
13 - 1/2 cup cooked, crumbled turkey bacon

14 - 1 tablespoon olive oil (for greasing pan)

# How to Make It:

01 - Set oven to 375°F and lightly grease a 9x13 inch baking dish with olive oil.
02 - In a large mixing bowl, blend ground beef with breadcrumbs, eggs, milk, garlic powder, onion powder, salt, and black pepper until the mixture is uniform.
03 - Transfer the meat mixture to the prepared baking dish and press evenly to create the meatloaf layer.
04 - Bake uncovered for 25 to 30 minutes. Carefully drain excess fat from the baking dish after baking.
05 - Stir together mashed potatoes and sour cream in a separate bowl until the mixture is smooth.
06 - Carefully spoon and spread the mashed potato mixture on top of the cooked meatloaf layer.
07 - Evenly sprinkle shredded cheddar cheese, then add crumbled turkey bacon and chopped green onions over the mashed potatoes. Return the dish to the oven and bake for 15 to 20 minutes, or until cheese is melted and golden.
