Toss potatoes with olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper to evenly coat.

Spread seasoned fries in a single layer on a parchment-lined baking sheet. Bake for 20–25 minutes, flipping halfway through, until crispy and golden.

Cook bacon in a skillet over medium heat until crisp. Drain on paper towels, then chop coarsely.

Remove fries from oven, scatter chopped bacon, and sprinkle cheddar cheese (and blue cheese if using) on top. Return to oven for 3–5 minutes until cheese is melted.

Top loaded fries with green onions, sour cream, and parsley. Serve immediately.
